Kale is a leafy green (and sometimes purple) vegetable in the same family as the cabbage. It is one of the healthiest greens….if not the healthiest green vegetable for you. Kale is super high in Vitamin K, Vitamin C, Vitamin A, Protein, Calcium, Omega-3′s, Fiber, Lutein, Cooper, and cancer-preventing phytonutrients. Kale detoxifies the body, enhances collagen synthesis and wound healing, tissue repair, red blood cell production, bone formation, boosts immunity and DNA repair, protects heart health and brain function, and lowers cholesterol.

Kale actually tastes great too! Its best to steam it and eat 1 to 2 cups 2-3 times per week. Some studies have shown high levels of kale consumption can lower the absorption of calcium, so it would be wise to not eat kale at the same time as a dairy product or calcium supplements (you can eat kale with dairy products….you just may not absorb the amount of calcium you would if you ate them separately).
I would recommend buying Kale at Whole Foods or a store similar that you trust will not spray it down with pesticides.
